Baker's Delight

I've been on a baking craze lately and on the lookout for new recipes. On the recommendation of the local librarian (thanks Cat!) I checked out Baking: From My Home to Yours and so far the one recipe I made (oatmeal peanut butter chipster cookies) was delicious. These cookies are not your delicate tea party cookies. They are a substantial cookie for breakfast (hey, oatmeal! and peanut butter!) or a late-night snack. Big and chunky, chewie and tasty, with just the right texture from the oatmeal. Some day I aspire to making the pecan honey cinnamon rolls made from brioche dough but I'm impatient about breakfast and can't wait the several hours it would take to properly let the dough rise and set. Someday. I'm testing out a few other baking cookbooks from the library before I choose one to purchase. Right now I'm looking through Baking at Home with The Culinary Institute of America and next up is Professional Baking. In between all these, I tried out a recipe for cinnamon coffee cake that my mom clipped from the newspaper a few months ago. A wonderfully dense and rich cinnamon- and nutmeg-flavored cake topped with an overabundant cinnamon- and vanilla-laced crumb topping. Another great breakfast or late-night treat. Thankfully I have several willing testers to help evaluate the baking attempts.
